Makes Great Carrot Cake, Smoothies, and Soups

I use the powder when I make carrot cake instead of grating carrots. I add it to many recipes including salad dressings. Now I always have carrots on hand. Sometimes the color is very pale, but in baking it makes no difference. In soups I add beets, or red peppers for color.
