Oh my...
I'm not normally a fan of floral coffees, but I'm always willing to give anything a shot just for the experience and to try and enjoy the experience a roaster has gone out of their way to craft for me, and, let me tell you, am I glad I gave this a shot.
I got this around 3-4 days off roast. I like to test via an espresso pull, and new right off this was great, but needed a rest and would the coffee would be up for the challenge. As an espresso it was bright and acidic and had an orange/lemon note. I could smell the jasmine, but not taste it, so I knew it was going to be subtle.
Today, I extracted it via pour over. Very tea-like. If you can run a 45 second bloom. I have a switch, so I ran the bloom open, and then poured half of the remaining ratio of water and held it for about a minute to two minutes. I opened it and slowly poured the remaining weight of water.
I brewed approximately 2 cups of coffee. Gave it time to cool. Once you get to a sipping temp the parade of flavors commences. I highly recommend this coffee, especially if you're more into 3rd wave style coffees. Clearly a lot of thought has gone into creating the expression on display here. 5/5

Hands down my favorite coffee
The flavor notes with Yirgacheffe are spectacular. This coffee is consistently good every time, and I have been drinking it for years. Highly highly recommend.
