Omega German Bock for Munich Dark
I used this for the first time brewing a Munich Dark lager and am pleased with the results so far. The beer is lagering so I don't have a final product to report on. I used a yeast starter, fermentation began within 24 hours of pitching the yeast. Initial fermentation temperature was 53 degrees, that dropped to 48 within a couple days (I have a cellar space that is not heated). Fermentation continued the entire time, slowing at 48 degrees. I moved the fermenter where it reached a steady 59 degrees, fermentation picked up again and continued for another 48 hours. Attenuation was 74%.
This yeast gave a robust performance through these temperature ranges. I have another couple of weeks before the final product is ready, but I would not hesitate to use Omega 111 again.
