So good!
I had hoped that pouches were available for this soup so we could taste it. Bought this for “food storage” but it has been calling my name, so to speak since it arrived. Well, I lasted more than a couple of weeks LOL. I prepared some a little differently, I used the instant pot, starting with boiling the water first, then mixing in the base mix. Secondly, I mixed in the noodles. I added a cup of extra water and a tsp. of Better than Bouillon because I wanted my soup more broth-y. Pressure cooked it for 5 minutes (next time I’ll try 7 as I like softer noodles or maybe just add a couple extra minutes of natural release). Once the pot beeped, I waited a minute of natural release then manual released the remaining pressure. Made the 4 cup version portions from the back of the can, with my extra cup of water and the add in of some cooked rotisserie chicken rendered roughly 5.5 to 6 cups of soup. All of my add-ins (with the exception of the 1 cup extra water and Better Than Bouillon that were added pre pressure cooking) were added afterwards. It was a bit salty in the end, which may be due to my Bouillon addition or poor measurements of the broth/veggie base initially, so I added more boiling water once cooked, too. This soup is really flavorful and has a little zip to it. I was surprised at how beautifully the vegetables grew and hydrated. This “4 portions” recipe was an “all you could eat” soup meal for 2 adults, so please consider that portion size might be different than the ‘suggested portions’. We use 16 to 20 oz. soup mugs and hubby went back for seconds. We prefer this so much more than the broccoli cheddar (with a lot of rice) soup. If you’re ordering 1 can, I’d recommend at least 2 because it’s that good. Great addition to pantry as well as food storage. I’m going to order another can or two. By the way the noodles are in the bottom of the can. The broth base with the vegetables is in a zip lock mylar bag. So, you’ll need to measure. If you like less sodium, reduce that broth base amount or add in extra water and or veggies if you have them.
