I make the best beef Stix around and was using 21 mm casing. It would split and a real pain to get on 21 mm tube so I switched to 23 mm tube and haven't had another problem. The 23 mm casing for smoke is the best ever and some people ask what I use because they like how it pops when you bite into it. I also use Willie's snack stick seasoning and Slap Ya Mama Cajun spice.

Wish it was better

Bought these as I couldnt find a 23mm collagen casing on my normal site in the quantity I wanted. Made several lbs of sausage and when they came up to temp, the casing contracted down to ~12mm and squeezed the meat out the side of the casing. Its also just flat out split a number of sausages. Wish I had a better review but these casings were pretty awful
