Korerima
I have long been a fan of cardamom, and when my Ethiopian neighbor introduced me to korerima, it didn’t take long for me to be hooked. I now have a dedicated korerima mill along side the pepper and salt mills. If you like cardamom, meet cardamom on steroids. Because korerima is rich in essential oils, it is best to add it at the very end of cooking, and then keep the lid on, so that the aromas and flavors don’t dissipate.
