Marbleling vs fat
The flavor of the steak was good. There was at least 25% waste in large fat areas as opposed to marbleling. A bit too much for what should be prime grade.

The best!
Excellent marbling, taste, and tender. Seared nicely in the cast iron and finished in the oven. Definitely our favorite.
