QC Seems Lax

Overall flavor is good, but there are entirely too many sub-par beans in this selection. Unacceptable number of quakers and the roast consistency is bad with a wide spread between under-roasted and a few over-roasted beans. I know Ethiopian origin coffees traditionally have widely variable bean sizes and this makes even roasting challenging, but it seems to me a bit more effort can be made to QC the final product before shipping.
