Love Iberico, Mixed Feelings About This Cut

Flavor was really good but the pieces we got were very uneven which made them impossible to cook. There was also a lot of silver skin / gristle which made the texture unpleasant. I enjoy this cut of beef a lot, and I also love iberico, just thought something was off with my package.

Would never know you're eating pork if you weren't told. Amazing flavor and tenderness!
