Ibérico Outside Skirt Steak

Meat is good but 35 % is fat . I realize good meat has fat but this ridiculous for what you pay. This package of meat is a serving for one person.

Never order it again. Fourth box. I always mix it up. I was disappointed with it. Fat is one thing. I was peeling off the silver skin.

Love Iberico, Mixed Feelings About This Cut

Flavor was really good but the pieces we got were very uneven which made them impossible to cook. There was also a lot of silver skin / gristle which made the texture unpleasant. I enjoy this cut of beef a lot, and I also love iberico, just thought something was off with my package.
