Description
The Miners Lettuce-Claytonia can be eaten raw or cooked, like spinach. Round, fleshy leaves are high in vitamin C. Miners used claytonia during the California gold rush, eating it to prevent scurvy.

Great for the winter garden
I’m in north Texas and I tried growing this in two different seasons, late spring and late fall. The spring ones completely failed, were leggy and hated the heat. I tried again in the late fall here as summer tends to linger. These have been an amazing and tasty addition to my winter greens garden! They’re more tender and succulent than spinach, but just as mild in flavor. I’ve never tried to store them, I just pick them right before I want to eat them. They’ve been fine after several freezes to 29 degrees F. I’ll keep watching them to see how cold they can take. Defiantly will grow again! I planted them alongside my fall carrots and they seem very happy there.
I agree, they’re slow to germinate and grow, but perfect for the slow days of winter! I may try again in early spring to see if they will grow faster then.

Love it!
Easy to grow. Tastes great. Pleasing texture. Reseeds. The plants are rather diminutive and go to flower but we ate the flowers and what we did not eat contributed to the next years supply.
