Excellent cut of Heritage pork, fantastic flavor

Very disappointed from what has been a great source of heritage pork. The meat was excellent, the butchering was poor. The butt had 3+ inches of back fat - excessive. After discounting for trimming, smoker shrink and bone loss, I realized a two-sandwich yield.
