Fabulous guanciale - Just don’t call it about 3. 5 or 4 lbs
Great flavor, well shipped, easy to portion and freeze but please weigh and don’t over estimate. I of course have a scale - 3. 1 lbs with string and plastic packaging. Go with flavor quality not with claims of size. Good guanciale is really hard to find and most Italian specialty shops now carry inferior stuff.

Guanciale, better than italy!
I've always been impressed with my Italian cured meats from Volpi. The Guanciale is especially excellent. I live in southern italy for the summer and pleased I have these products to rely on when I return. I have toured the facility and am impressed with their "old world" standards.
