Flat brisket

A lovely fresh slab of brisket arrived, nicely packaged and chilled. Hate the way most butchers roll and tie it. I put the whole lump into a brine mix for around 10 days then chopped it in half. I froze one bit and cooked the other piece to make the best salt beef. Gave the family salt beef sandwiches which they loved. The brisket had just the right amount of fat for flavour. Will be ordering another 4kg to make my award winning chilli. Beautiful meat, thoroughly recommend
