Small Batch Preserved Lemons

Preserved Lemons are a must in the kitchen

I like preserved lemons and have even tried to make them myself. It's much easier to drop by Toast and Table in old town O'Fallon IL and buy a jar. The Earth Candy brand is very nice for its attention to the canning details: balanced ingredients, and full flavor of the lemons. I use them in dressings and roasted dishes, mostly, but have been known to just chow down on one! Candied lemons are not the same as tossing fresh lemons, sugar and salt into a dish. Flavor takes time! Advice--when you've emptied a jar, stick some lemons (or limes) back into the residual solution in the empty jar. It won't be as good as the original, but it will be better than going without until you can buy some more at Toast and Table.
