Rhubarb & Custard Shortbread

Rhubarb and custard has been a favourite of mine since childhood, so I was intrigued to see it transformed into a shortbread. I’m pleased to report that Sawley’s absolutely nailed it. The buttery shortbread provides the perfect base, with the gentle sharpness of the rhubarb balanced beautifully by the smooth, creamy sweetness of the custard. Every bite is packed with flavour without either element overpowering the other. As an ex First Class cabin crew member, I’ve served some wonderfully indulgent afternoon teas, and these biscuits would have been right at home on the top tier. They’ve certainly earned their wings in my biscuit tin!

I haven’t actually opened these yet as I’m going through the Apple crumble ones but they are diminishing very quickly so these will be opened later today

Tastes brilliant. Arrived in mint condition exactly when told it would. Al AND all MADE IN ENGLAND . I have a friend who adores anything made with rhubarb and custard. This 6 pack of shortbread made from his favourite flavours made the most wonderful and differant 'thank you' present
