This is my first time dealing with gluten free cookies so my experience may be typical of all gluten free cookies. First, the flavor was quite good so it gets extra points for that.
However, the dough was difficult to worth with because it was sticky and sponge-like. I found that I had to dip everything in GF flour in order for the dough not to stick. This made cutting out shapes very difficult. Also, the “spongy” texture made the dough hard to cut out shapes because the dough would “reseal” the cut unless I worked fast.
After re-rolling the dough a couple of times with additional flour, it finally came together and I could cut out the cookies.
The cookies also puffed up and there was some minor spread but overall, they maintained their shape. As a result, I will need to use the bottom of the cookies for decorating.
The cookie itself is quite delicate and almost “cake like” in consistency. But, again, they taste good!

This is my first time using the sugar cookie mix. I decided to make them as drop cookies, rolled in sugar (this is how I prefer sugar cookies). They were super easy to make and absolutely delicious! 2 GF people in my house and we both loved them!
