I waited patiently for the honey to come back in stock and I am not disappointed. Wow. The flavor is not as thymol-heavy as I would have expected and it's sweeter than I anticipated. It is awesome in tea, but I would suggest it with a cheese platter or in a poultry or fish dish, too. It feels medicinal but in a really soft way, and one could definitely use this in a variety of ways. I'll be trying the other flavors, next, but I would definitely reorder this one!
