Ancient Grain Pasta, Linguine -Low Gluten, Organic

Great pasta!

I've used two of the pasta shapes so far, and both were very good. Interestingly, both threw off much more starch than my go-to Rummo pasta. That may explain why, even though both were cooked al dente, they seemed much lighter and easier to digest. The starchy cooking water, when added to your sauce, guarantees a silky texture, and the bronze extrusion process allows it to coat each piece. This is definitely premium pasta, and well worth the price.

My wife and I both loved it. We are not gluten intolerant; I purchased the pasta because it is toxin free, plain and simple. With the low gluten index I was worried it would be slimy or gummy. My worries were for not. This Vescera pasta was rich and flavorful and had a firm, elastic structure. It absorbed the sauce beautifully, as I finish cooking all my pastas in the sauce, and that's a key indicator for me of a good pasta. I would give it 6 stars if I could. I will throw out all my other pastas and be buying Vescera exclusively. Thank you, Ric for bringing this pasta to us.
