This pan is awesome! Especially as a sear-then-oven pan. It is thick enough to retain heat but not so thick that it's too heavy. Whatever carbon steel they chose for this is extremely conductive and takes less heat to make it work well. Akin to my Debuyer mineral b pans. I seared a 5 pound pork roast and got the most beautiful and even crust. Can't recommend this pan enough, especially for the price.
