Signature Cajun Beef Boudin

My grandmother was famous in Beaumont for making Boudin and this was up to par with hers. Loved it

The Oxtail infused boudin is good flavor and decent amount for what you pay. Many have said it’s expensive and it is BUT oxtail is expensive so I expect it to reflect the price of the ingredients. One thing that keeps this lower than a 5 is the cook time recommendation. I would cook lower temp and maybe not as long. All of the ones I cooked bust open and the guts were everywhere . I made a stir fry from it. It was decent but to enjoy the sausage, cook less time and turn more frequently than the recommendation

Both meats were full of flavor (oxtail and sausage). I'm definitely trying the ribs and brisket next. Bernard from South Carolina
