Crumbly dry texture reminds me of parmesan reggiano. Really good flavor with an aromatic cheddar flavor. Aftertaste reminds me of baked macaroni and cheese.

Firm and flavorful.
A very flavorful and yes, beautiful, cheese. Happy with it and with the other cheeses I’ve just purchased from Capella. Will buy again!

THIS is a cheese shop !
On my third visit to Capella, I placed an order for several 1 lb blocks of some new-found favorites. The Vielle Mimolette is one of those: a firm cheese, very subtle in the mouth, reminiscent of a Dry Jack with a beautiful orange-the-fruit orange color. Worked well a chardonnay, and almost as well with a robust Zinfandel. I'd nibble it, rather that putting it with bread or wafer.
