The Solidteknics Skillets are awesome, but take a bit of mental adjustment. They are not immediately "non-stick" like the coated pans are. After watching non stick pans peel and flake and hating the idea of feeding that to my family and myself, I am happy to invest in cookware that should last a lifetime. This is my second pan. The patina on the pans takes some getting used to. It varies according to what you cook (eg, higher acid content) but it is quick and easy to reseason. The pans surface improve over time. I don't use any detergent, just hot water, soak, scrape with a flat edge wooden spoon and the coconut husk scourer if necessary. This big skillet is great for a family, although I wish I had paid more attention to the height - a little bit more depth to the pan would be great (totally my fault). It is great for meats, but veggies tend to escape off the sides a bit. It also doesn't have a lid option, which would make it 5 stars. It is great that there are no handles where screws can come loose and it is really solid, but not ridiculously heavy.
