Small product with huge difference.
I've been to ONA in Marrickville quite a few times and always enjoyed the espresso I've been served when extracted with assistance from the Paragon. I bought a set for myself to see if with other varietals it can be even better. I got similar results from coffee's like bourbons and geishas which mainly added some layers to the coffee and better defined the crisp acidity and sweetness but when it came to extracting Ombligon and Pacamara coffee's. It was a whole other level. Namely i was using the El Diviso Ombligon Signature series from Axil coffee and the Finca Zarza Pacamara Natural from Code Black coffee (A very similar batch to the one Jack Simpson used in the 2024 WBC). This added a huge (Not an over exaggeration) amount of well defined flavor, sweetness, clean crisp almost sparkly acidity and a lovely silky texture. Genuinely if you love and are able to get your hands on some Ombligon or Pacamara roasted for espresso and have access to use the paragon, i HIGHLY recommend you do so.

Yes, it is agame changer
Watch Josh's video and you will see why you should give these a go - then after trying them for yourself you will be hooked! I am not a coffee officiando but I can tell you that they produce a much smoother, layered espresso that is very easy to appreciate and enjoy. These are most interesting times for the home coffee maker who is willing to put in the time and experiment to create new angles with familiar grinds. Knowledge and tools are far more accessible and affordable than ever before and you will soon be making coffee that your local cafe won't have the time or inclination to match. If I feel like something a bit smoother and sweeter, I will make myself a coffe with Paragon balls, or if I want something a bit brighter and fuller then I will pull a shot 'old style, without them. You will soon find that you are brewing coffee that is far better than the standard cup made by most cafes who will rarely have have the time or inclination to brew anything out of the ordinary. So if you are willing to experiment to create different, better tasting coffee, these are definitely for you

Subtle but distinct change in flavour profile
Took a bit to get used to when combined with a naked portafilter and scale. In the end, I just pushed the espresso cup back out of the way once 20g of the shot was poured and this worked.
