Wild Mushroom (Vegan) Pierogi - Earthy & Flavourful

I had very high hopes for these and bought lots of different kinds but was sorely disappointed. I'm Polish and know what good pierogi should be like: the pastry should be thin, and boiling them ought to be enough. One shouldn't need gallons of oil to fry them! My guests ended up helping with the frying… What a mess.
