This is the way to start off a week. Seared in cast iron and finished in oven, pulled 125 internal and rest 10 min. Perfect size to split. So far one of my favorite steaks from herd and grace.

Seared this in a cast iron skillet, and it was phenomenal. Great steak that makes it hard to decide which is better, the strip or the filet. I recommend picking one up and finding out for yourself
