Lamb Striploin

Beautiful cut with a full fat cap on top and succulent meat with a nice but more subtle lamb flavor. It comes four 3/4 pound rectangular pieces to a pack at the shop. Did a one day miso brine followed by a lamb rub for another day, then did a reverse sear with a couple chunks of cherry wood and hickory. Family truly enjoyed it.
