Agar agar powder is known as a vegan version of gelatin. It's viscosity can be lower than plain gelatin (i. e. harder gel that fractures rather than a jiggly jello). What I have found is that making my own jello has been troublesome, often with a hard gel at the bottom of a liquid, not what I want. Agar works similarly, but it prefers a more alkaline (added calcium) solution rather than adding lemon juice. I find the gel is cloudy. I have been experimenting with mixing agar with instant Pectin, which you can find in the grocery store for unknown PH levels, or with konjac or guar gums, which increases the likelihood of a strong gel. I don't bother to measure, just mix approximately half and half. The gels do seem to set easier when mixed.
