Sun-Dried Tomato Minestrone

This soup starter is delicious. Decided to give it a try when I saw it at the Peddlers Village location, made it later in the week and it was fantastic! My 11 y/o loved it and was taking it to school for lunch everyday. We have since ordered more and stocked up because she keeps asking for it for her school lunches. We add potatoes, cannellini beans, kidney beans, carrots and the large can of tomatoes & pasta suggested on the packet. I also cut the water total in half and sub with chicken stock, but I make more broth than the recipe calls for, maybe 6-7 cups total. It comes together so quickly, so makes for an easy dinner on a busy night!
