I've only recently bought a Sakai Jikko 'Wa-Nakiri vegetable knife and so I've not needed to use the 1000 grit Whetstone. The Atoma Wide Surface Repair Grindstone will come into its own when the Whetstone develops shallow areas from knife sharpening.
