Absolutely fantastic flour. It matthe best pancakes and soft-doigh cheese pies. It's organic, healthy, delicious and it's produced in North Carolina, what can be more pleasing. Because the dough preparation has different requirements it took me a few times to learn how to work with ancient flours but the result is wonderful. And, it has a very rich flavor and doesn't require adding salt if you are on a low sodium diet. Just get it and try it
