Yoshihiro Honyaki White Steel Mirror-Finished Namiukashi Yanagi Kiritsuke Sushi Sashimi Japanese Knife with Triple Nickel Silver Ring Ebony Handle

Cuts like a DREAM, I work as a sushi chef and used a westermeier house sashimi knife. It worked it was sharp (10k whetstone used on it, razor cut hair sharp) but compared to THIS beauty; it was a mid tier knife because *this one* not only has beautiful Craftsmanship, mirror finish and sharpened to a near dangerous level. The handle has a slight taper that makes the grip on it very stable, it has a nice weight to it, not to heavy but definitely has enough weight to guide itself to cuts. It's a very steep price but I truly believe it was worth every single penny I paid. P.S the saya cover is included is also a relief to keep it safe and did not disappoint
