Finishing Pinot Noir

I used to just use the juice as supplied by your kits but I now add oak chips and raisins during the first fermentation. I put the oak and raisins in cheese cloth bags and remove them before the second fermentation. I also rack two and sometimes 3 times before finishing the wine. Makes the wine to our taste a lot better.

So far so good

This is the third kit I’ve bought and they ones that have been bottled are very drinkable. The one problem I did have was on the last one the bottom flaps opened and the bag fell Luckily I broke its fall and it didn’t open. The top of the box was taped up so someone must have must have seen it was weakened but why they didn’t tape the bottom is beyond me. There are handles on the side of the box so it’s expected you you can lift from them. Had the bag broken it would have created a mess and I would at the least expected a refund. This
