Keluga Supreme: Noticeably more expensive and noticeably better. Best to also order another - like the Ossetra - to compare. They’re both really good, but in the side-by-side, the Keluga wins. Larger beads, more succulent- worh the upgrade. Now that we know, we’ll just go for more,of the Keluga next time. We serve on lightly-fried potato rounds, amd a little bit of crème fraiche . . . and don’t forget the chilled vodka. We like Chopin potato vodka from Poland. Clears your palate for the next round of caviar!
