misleading but good
I give a mixed review, solely because this is misleading. I luckily, know that Saigon is a culinary term for "higher quality" cassia. however, I was looking for the Cinnamomum loureiroi variety referred to as Saigon. this product however was not explicitly denoted as to which species it was. So, i took a gamble to figure it out at home. This is Cinnamomum Cassia, a common chinese variety that has a very different flavor profile. Regretfully didn't fit my purposes but i took that gamble and can use this for something else. this product was also very dry, lacking in oil, so wasn't even fitting the culinary term of Saigon. So, that could just be the specific batch i got, i don't give down marks for receiving something not fresh cause this didn't explicitly say it was. I would however recommend including which variety of Cinnamon this is, in case someone like me wants a specific variety like Saigon and is attracted by the low price. However, Chinese cassia is very woody. For my purpose expecting a "Red Hot" candy flavor that true Saigon is known for was displeased to receive a woody sort of spicy variety, but cause it was dry it was very only as spicy as a True cinnamon, Ceylon. So, all in all just label it properly for the future, it's a decent quality Cassia and it's a good price. and if a fresh stock arrives this will be a really good priced Chinese cassia. but not a substitute for a saigon.
