Lily Bean’s carrot mix is delicious. I baked it as a cake and served it to people without telling them it was gluten free and I made it dairy free as well. No one had any idea! I use almost all LB mixes and absolutely love them!

I made the carrot cake with the recommended grated carrot and frosted with the marshmallow frosting (it makes a ton) in an 8 inch cake pan. it was for a staff members birthday. There wasn't a crumb left and everyone is still raving about it
