I had been sick for years when i finally found a Functional doctor that helped me find out why about 3 years ago. I knew I had a wheat allergy just didn't realize it was a serious gluten intolerance.
I really struggled being GF for the first couple years, but now i am seeing the light as i realize how easy clean cooking can be and how important clean ingredients are even if I wasn't GF. My goal is to make a good, not so solid or dense, sourdough bread. Not for everyday but from time to time as a nice treat! I am grateful I found you. 🙏 My first loaf with your bread flour was the best so far! I look forward to trying your recipes and getting some more flour. Bless your heart for striving to figure out a blend that works for us all, as I know it's an over whelming task.
