This is made from whole soybeans from Japan!
Using seawater derived bittern and no softening agents (baking soda), this has an old fashioned and firm texture that results in delicious freeze dried tofu.
It is very nice, but it can be little more thicker. It is only my opinion, it can be as it is.

含め煮を作りました。しっかりとした食感で、煮汁をよく吸って美味しかったです。This tofu has a great texture. I made Fukumeni (Simmered Koyadofu) with this tofu, and it soaked up the wonderful flavor of sweet dashi broth.
