Great salmon, not so great cut on sole

The premium salmon cuts I received are terrific as usual. This is the second time ordering the sole. The 1st time I ordered it, the pieces were way too thin and small with one decent sized filet. This time was exactly the same. The pieces were so small and thin I could barely cook them in a pan without them completely falling apart. Very dissapointing. I am an experienced cook and I know how to handle sole but this was impossible.

The best coho salmon I’ve ever had ! Taste was amazing and so fresh no fishy smell . The premium cuts are well worth the extra cost. This is our new company for salmon, halibut etc… Highly recommend!
