Love your product, but I found the Wagyu brisket just too rich. Gathered the full 16 hour treatment in smoker but overwhelmingly fatty and rich. Any suggestions greatly received?

The brisket was very uneven. I had to trim off a lot of fat and meatin order for it to be uniform. It ended up drying up. This is my second brisket from here.First one was great. This one wasn’t good at all
