This knife is razor sharp, cuts with almost no resistance at all. Wasn't sure i would like the handle judging by the photos, but it fits very comfortable in the hand. This comes in handy when facing a lot of meat to slice. Cuts brisket like a hot knife through butter. Also gave it a go on trimming fat caps on pork shoulders, worked amazing from trimming off super thin slices to cutting deep into the fat it performed outstanding. Bravo dalstrong. After an hour+ of slicing and trimming I felt no hand fatigue.

It is all what I expected to be, very easy to handle, super light and still very precise, very sharp of course. Thank you
