I love the Chateau Laguiole Melchior. It looks and feels like quality. It feels short, solid and comfortable in the hand, with weight and balance that are spot on, and a hinge/action on both knife and worm that’s smooth but firm. Overall it’s a beautiful, reliable everyday tool – and the ebony wood handle gives it a quiet, understated elegance that I really appreciate. Makes me want to try all the other ones...
