Xanthan Gum makes a nice sauce/gravy
Xanthan Gum makes a very nice gravy when on a low-carb or Keto diet. It is a little tricky to use. My preferred way is to add it directly to the broth as it is coming to a gentle boil and whisk continually until it is incorporated and there are no lumps. It thickens the broth very nicely and is a very fine addition to chicken, pork, and beef. I recommend it.

salad dressing
I bought this for use in salad dressings and tzatziki sauce just to give them a little more body. Worked great just using a very small pinch.
