Great fish. Arrived as requested on Thursday with plenty of dry ice. Thawed and prepared for 48 hr salt plus other special ingredients cure Monday. Cold smoked Thursday 7.5 hours. So the Icelandic salmon is my first from that region. It is oily relative so a Chlian salmon but tastes very good. With my guests we will refine that evaluation but I am certain it will be a hit
