From euro to Japan, not a bad entry point.

Having owned European knives for the last 30 years, I decided to pivot to a Japanese knife. First thing I noticed is its substantially lighter and more nibble than a Euro knife. Not yet sure if I like that. But this knife in particular felt more solid in the hand compared to some of the other knives I held. Edge seems to hold okay, honing brought it back pretty easily. So far I like it. Having a lot of experience with a knife of this size, it should become a workhorse of the kitchen.

Extremely sharp and holds its edge very well. Very light and versatile.
