Shindo-San magic

Shindo-San’s hand-hammered concave blade (mimicking an s-grind) and blade thinness are phenomenal. This is a real sleeper knife in terms of value for $ - hard to imagine they’ll stay at this price point for long. Performance-wise, this is unquestionably one of the best potato cutters I’ve ever used. Massively impressive. Balazs at JKS went to extra lengths to select a fantastic blade to complement the ones I already have and fit it with a D-shaped handle on request that balances the blade at the heel.

The performance on this knife is outstanding. Certainly there are other similar options with better fit, and finish, but I don’t think you’ll find them at this price point with better performance. The grand is unique and allows the knife to just fall through food. You cannot go wrong purchasing this item.
