This is definitely high quality koji, and koji house makes this convenient option for a particularly hard to find product as the only way to option this for me otherwise is to buy the koji spores and go through the trouble of inoculation and maintaining proper conditions to grow the koji mold and dry once done which takes days and patience. Enter koji house with premium rice from California they go through all that hassle, so you can use the koji for food projects, I could smell the sweetness / umami goodness upon opening the bag. This is a chefs secret ingredient. I did experience a minor issue with my initial order, as the bag wasn’t properly sealed and some rice leaked into the box. That said, Nick handled the situation quickly and professionally, shipping a replacement with expedited delivery. Overall, excellent product and outstanding customer service.
