I like the Jamon style best. It could serve as a nice convenient tapa with Manchego and a nice Rioja along with anchovy stuffed green olives. Or by itself of course. I keep them in the fridge once open, but most flavorful at room temperature. The casing peels back easily if you care not to eat it it, but keeps things fresh.
