Pretty decent whiskey substitute
I’ve found the St Oak to be a good substitute for an evening nightcap.
Over the years, I’d gotten into the habit of ending the day with a dram of rye whiskey or bourbon. I’ve found the St Oak to be a fairly good substitute for my occasional evening sipping whiskey- it has a complex flavor profile with a little bite of spice that I find to be a decent substitute for the complex flavors and bite (from alcohol) one gets from a scotch, rye, or bourbon.

My go-to for a low-alcohol manhattan.
My manhattans use barely a splash of sweet vermouth, even in my whiskey days, so going with St. Oak and real sweet vermouth, some aromatic bitters and a fancy cherry is a great super-low-alcohol treat.

A great alternative
I’ve been substituting St. Oak for bourbon in my Old Fashioned and adding a shot of Willie’s Remedy. The citrus in the Willy’s really complements the St. Oak and rounds out the drink; relaxing with a soft buzz. A dash of Angostura Bitters and a dash of Orange Bitters with a little sugar free simple syrup and it’s pretty top shelf. I just had dinner at Gordon Ramsey’s last night and had theirs which had a dash of vanilla as well. I’m going to try that next; you have a great product that’s a serious alternative (not replacement) to bourbon.
