Smoked Preservative-Free Sausage

Flavor is top notch as well as overall texture and casing. There are a few tiny hard bones. Other than that, very nice!

A lot better than store bought

Sausage had a very strong smoke smell and flavor. It was lean (not full of fat) but the casing was tough and hard to chew. In the south, the sausage here is very fatty. In the north you have a better choice of polish sausage to try. All in all I would have given it 5 stars if the casing was lighter.
