We bought and loved these iberico ribs twice, highly recommend. We knew iberico pork from Spain, but this is as good or better than what we had there.
Important note on cooking them.
Simple seasoning, salt, pepper, thyme.
The first time, we followed online recommendations for ~30’ oven cooking and to finish with broil for a few minutes. That last part was a bad advice and dried the ribs too much.
So the second time, we just put them in the closed Weber bbq, preheated on high but turned to medium for the ribs, for an hour, then turned it high and left a few mn on each side. This was absolutely perfect, the longer and slower cooking was much better.
